We’ve got a pretty nifty recipe for you today from one of our own! This recipe of Breaded Chicken Cubes was sent in by Jordan Bridges, Chief of Marketing for Tasty25 Magazine! Trust us when we say that they’re an excellent blend of wholesome flavor & health. Jordan’s Breaded Chicken Cubes make for a great appetizer, or a delicious addition to any salad mix. What you need:
1/2 Pound chicken breasts (Cut into cubes)
1 Small package of unseasoned bread crumbs. (Use gluten-free bread crumbs to make recipe gluten free!)
1 Egg
2 Tsp. basil
2 Tsp. oregano
1/4 Tsp. sea salt
1 Tsp. ground black pepper
Extra-virgin olive oil
Directions: (Approximate cook time: 25 minutes; Serves 2-4 adults.)

Preheat oven to 400 degrees °F.

Rinse and cut chicken breasts into cube chunks.

In a medium-sized bowl, mix egg, salt, pepper, oregano, and basil until evenly mixed; Coat chicken in seasoned egg mix.

Place bread crumbs in an additional medium-sized bowl, then take coated chicken chunks and evenly coat in bread crumbs.

Lightly grease a baking pan with olive oil; Bake chicken for 15-17 minutes, or until crispy.

Place toothpicks in chicken chunks and serve on a plate, or add to any salad.
