What you need:
2 Cups cannellini beans, drained and rinsed
3/4 Cup small broccoli florets
1 Red pepper, diced
1 Yellow onion, diced
2 Cloves garlic, minced
1 Tsp. soy sauce
1/2 Tsp. olive oil
1 Tsp. garlic salt
Black pepper (Optional)
Directions: (Approximate cook time: 15 minutes; Serves 4 adults.)
Heat the olive oil over high heat in a medium saucepan; Add the broccoli, red pepper, onion, and garlic.
Next, add the soy sauce, salt, and black pepper (if desired) to the veggie mixture; Cook on high heat until cooked through and a little tender, but still crunchy.
Pour the drained beans into a medium bowl, and add the cooked veggie mixture. Add Italian dressing if desired.
